Monmouth Pudding

Ingredients

11 oz. butter
1 oz. Sugar
3/4 pint of milk
Grated rind of 1 lemon
6 oz. Breadcrumbs
3 egg yolks
4 tablespoons strawberry jam

Method

Put milk, sugar, butter and lemon rind into a saucepan and bring almost to the boil. Meanwhile put the breadcrumbs into a bowl. When the milk mixture is hot, pour it over the breadcrumbs. Leave aside until cool. Stir in the egg yolks and spread half of the mixture into a greased baking dish. Warm the jam until runny, then pour half of it over the mixture. Add the rest of the breadcrumb mix and spread the remaining jam on top. Bake for 40 to 45 minutes at 180 degrees Centigrade.
